This is a great Italian tomato sauce for busy working moms. It can be used as a spaghetti sauce, lasagne sauce, pie or potato filling.
Preparation time 5 minutes. Cooking time 25 minutes. Ingredients1 tbs olive oil 1 Spanish (red) onion 3 or 4 cloves of garlic 2 x 250g diced tomatoes 1 heaped tbs tomato paste 500g beef or chicken mince 2 rashes of bacon (optional) 1 large carrot 1 stock cube (in 250g of water) 1 tsp sugar Italian herbs, salt and pepper to taste. RecipeDice carrot, onion and garlic into small pieces. Heat oil in a large pot and sautee carrot, onion, garlic and a sprinkle of Italian herbs until the onion is translucent. Dice bacon and add to the pot, cook for two minutes. Add the mince and cook until brown (remembering to stir and break up the mince). Stir in the tomato paste and cook for 1 minute before adding the canned tomatoes. Let the mixture cook for a further minute and then add the stock in. Allow the combined mixture to cook for one minute then add in the sugar and a shake of Italian herbs. Let the sauce simmer and thicken for 20 minutes and add salt and pepper to taste. Serving SuggestionsAdd it to any pasta, with parmesan cheese and a side salad. Or use this sauce in a pie with mashed potato on top. You could also use this sauce as the filling for stuffed potatoes (add a little tasty cheese to the top. Or add some kidney beans and Mexican chilli powder to create a yummy chilli or topping for Nacho's!!
